Sometimes, life has to happen before blogging.
At the last minute we were invited to dinner over at a neighbor's house.
So instead of blogging yesterday, I decided to make my favorite cookies.
I have fond memories of making homemade oreos at a neighbor's house
as a little girl. We'd sit and make hundreds of these little cookies for an
upcoming wedding reception. It was there at the kitchen counter where
I received some of the best advice and love.
You can see why it became my favorite go-to dessert recipe and it's easy to make a lot.
Plus, the it's perfect way to say, "I love you."
Kathy's Homemade Oreo's
For the dough:
+1 Package of Devil Food Cake Mix
+2 eggs
+1/2 cup of oil
For the frosting:
+1 stick of butter (1/2 cup)
+8 oz. of cream cheese
+8 oz. of cream cheese
+3-4 cups of powdered sugar
+1 tsp of vanilla extract
Heat oven to 350 degrees. Mix dough ingredients and roll dough into little balls. Place on cookie sheet and bake for about eight minutes. Remove cookies and cool. Place the cookies in the freezer for at least 15 minutes to harden in order to frost.
For the frosting, cream the butter and cream cheese together. Add powdered sugar slowly until you reach the right consistency. Don't forget to add the vanilla.
Then my favorite part, since I'm not fancy-I just take a table spoonful of the frosting and put it on a cookie and then smash another cookie on top.
Want to be fancy? You could die the frosting pink with a couple of drops of red food coloring for Valentines and even use a heart shaped cookie cutter instead of rolling the dough into little balls. Use a frosting tip to put on the frosting evenly.
Either way, it makes a wonderful treat!
